German Chocolate Chaffle Cake Chaffle Ingredients

  • 2 eggs
  • 1 tablespoon melted butter
  • 1 tablespoon cream cheese, softened to room temperature
  • 2 tablespoons unsweetened cocoa powder or unsweetened raw cacao powder
  • 2 tablespoons almond flour
  • 2 teaspoons coconut flour
  • 2 tablespoons Pyure granulated sweetener blend
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon instant coffee granules, dissolved in 1 tablespoon hot water
  • 1/2 teaspoon vanilla extract
  • 2 pinches salt

Makes 4, but only 3 are needed for the cake.

German Chocolate Chaffle Cake Instructions

For the chaffles

  1. Preheat mini Dash waffle iron until thoroughly hot.
  2. In a medium bowl, whisk all ingredients together until well combined.
  3. Spoon a heaping 2 tablespoons of batter into waffle iron, close and cook 3-5 minutes, until done.
  4. Remove to a wire rack.
  5. Repeat 3 times.

Makes 4 chaffles – 3 for the cake and one as a bonus! ?

German Chocolate Chaffle Cake Filling Instructions

  1. In a small saucepan over medium heat, combine the egg yolk, heavy cream, butter, and sweetener.
  2. Simmer slowly, stirring constantly for 5 minutes.
  3. Remove from heat and stir in extract, pecans, flaked coconut, and coconut flour.

Assembly: Spread one-third of the filling in between each of 2 layers of chaffles and the remaining third on top chaffle and serve.
